BBQ Sides – Chips and Salad

To accompany my veggies burger recipe I have created the ultimate BBQ sides – chips three ways; zesty lemon and parmesan courgette chips, smoky paprika sweet potato chips and harrissa spiced carrot chips and the perfect summery peach and mozzarella salad. Because what is a BBQ without all the trimmings? After all they are the best bit and is what really takes it from an alright lunch time spread to the best shindig you have ever laid your eyes on. These recipes are super simple and can be thrown together in no time at all – there is no excuse for a lousy BBQ this year!

Chips 3 ways ingredients:

  • 1 Large Courgette
  • 1 Large Sweet Potato
  • 3 Carrots
  • Juice of had a lemon
  • 30g of grated parmesan
  • 2 tsp of smoked paprika
  • 2 tsp Harrissa seasoning
  • Salt and Pepper
  • Olive Oil

Method:

  1. Preheat the oven to 180 degrees.
  2. Start by slicing the vegetables into chip shapes that are roughly all the same size.
  3. Place the different vegetable chips into separate bowls and first coat the courgette chips with the grated parmesan, lemon juice, 1 tbsp of olive oil and a sprinkle of salt and pepper. Make sure that all the chips are covered.
  4. Spread evenly onto a baking tray.
  5. Repeat the process with the sweet potato and smoked paprika, olive oil, salt and pepper.
  6. And then the carrots and harrissa seasoning, olive oil, salt and pepper.
  7. Once all the chips are evenly spread on a baking sheet bake in the oven for around 30 mins until they are golden and crispy.

Peach and Mozzarella salad ingredients:

  • 1 Ball of Mozzarella
  • 2 Ripe Peaches
  • Fresh Lettuce of your choice – I like using cos or romaine lettuce.
  • Handful of Cherry Tomatoes
  • Lemon juice
  • Salt and Pepper
  • Olive Oil

Method:

  1. Start by washing your lettuce and arranging in a large serving bowl.
  2. Slice the peaches into thin slices.
  3. Tear the mozzarella into chunks and slice the tomatoes into half.
  4. Arrange the salad ingredients onto of the lettuce.
  5. Drizzle the salad with the olive oil and lemon juice before sprinkling with salt and pepper.
  6. Toss the salad together and bobs your uncle…all done!
