I don’t know about you but I am 100% a morning person. You will rarely catch me awake past 11pm but I will always be the first up in the morning! You may think that this is because I love to seize the day and make the most of every second, do early morning yoga and drink lattes at sunrise whilst power-walking around the park. Whilst some of this is sometimes partially true, the real reason I get up so early is because I LOVE BREAKFAST. I go to bed thinking about what I’m going to have for brekkie, dream up new combinations and wake up starving for food.
Breakfast is essential in my world and as a consequence a missed breakfast is unheard of and on the odd occasion that this nightmare occurs, I am one VERY hangry human. In a bid to conquer the morning rush and leave no tummy empty I love making and sharing my favourite breakfast recipes, my new favourite being this super easy overnight oats recipe. Probably the simplest, yet most delish overnight oats recipe yet. The lovely people at Froo-t sent me some of their smoothies and challenged me to make the best breakfast for heading back to school or uni that you can make the night before and grab on your way out of the door.
Ingredients: Serves 1
- 40g Oats
- 3 Tbsp Chia Seeds
- 1 Froo-t Banana and Strawberry Smoothie
- 50ml Milk
- Strawberries for topping
- Mix together the oats, chia seeds, smoothie and milk in a bowl or a mason jar. (I find a mason jar easy to grab and eat in the car in the morning.)
- Cover and store in the fridge over night.
- In the morning top with strawberries or your favourite fruit – a dash of granola is great – and dig in!
