Vegan cinnamon buns are hard to find, but fear not you don’t have to look any further! These buns are fluffy and soft on the inside with a caramel-like buttery filling and of course a shed load of cinnamon. Make them for elevenses with a cup of coffee or dessert with a scoop of vanilla ice cream. Whatever the reason, you should give them a go!

Ingredients:
- 480ml Oat Milk
- 115g Plant Based Butter
- 50g Sugar
- 7g Active Dried Yeast
- 690g Strong Bread Flour
- 1 tsp Salt
- 100g Vegan Butter, softened
- 100g Sugar
- 3 tbsp Cinnamon (can adjust to your liking)
- 160g Icing Sugar
- 2 tbsp Oat Milk
- 1/2 tsp Vanilla Extract
Method:
- Start by melting your butter, once the butter is melted add the milk to the pan and heat for 30 seconds on a low heat to bring the temperature up to room temp.
- Add the melted butter mix and sugar to a large bowl and whisk together. Sprinkle the yeast on top in an even layer and set aside for 1 min.
- Next add only 600g of the flour to the milk mixture with the salt and mix with a wooden spoon until just combined. Cover the bowl with a tea towel and leave to rise for 1 hour in a warm area.
- Preheat the oven to 180 degrees.
- Once nearly doubled in size, mix in the remaining 90g of flour, then turn out onto a floured surface. Lightly knead the dough, you may need to add more flour if it starts to stick to the work surface. Knead the dough until it no longer sticks to the surface, it will take about 4-5 mins.
- Roll out the dough into a rectangle, which is about 1-2cm in thickness. Neaten up the edges if needed, then spread the softened butter on the dough. Then sprinkle the sugar and cinnamon in an even layer on top.
- Tightly roll the dough, starting with one of the long edges, into a spiral. Trim the edges (definitely cook these as well if you have room in your dish or use a smaller second dish), the cut the log in half.
- Cut each half into around 7 pieces that are around 4cm thick, then place into a greased deep baking tray. Do the same with the other half of the log. You want to arrange the buns in the tray so that they sit next to each other quite snugly and are touching.
- Cover with a cloth and leave to rise for 30 mins.
- Once risen bake in the oven for 25-30 mins until they are golden brown on the top and smelling delicious.
- Remove from the oven and leave to cool slightly. Whilst they are cooling you can make the icing by mixing the icing sugar, vanilla extract and oat milk together.
- Drizzle over the warm cinnamon buns and dig in!
